Melt 1 tablespoon of the butter in a non-stick frying pan. Add halloumi and cook until brown on both sides. Set aside. Add the second tablespoon of butter to the pan, then add the onion, garlic and ginger. Cook over a gentle heat for 5 minutes until softened. Add the curry powder, garam masala, turmeric and yellow curry paste to the pan.

Once hot, spread halloumi slices in a single layer and cook until golden brown, about 1 to 2 minutes per side. Finish curry and assemble: Remove from heat. Stir in lime juice and cilantro. Taste and adjust seasonings if needed. Top the curry with the seared halloumi cheese and fresh garnishes (see note 3), if using.
